Gum xanthan

A brief description

Xanthan gum is a polysaccharide that is produced by the bacteria Xanthomonas campestris.

Applications of xanthan gum

Dairy products, sauces, dressings, fillings and other foodstuffs
Suspension agent, stabiliser, emulsifier
Gelling agent
Thickening agent

Baked goods
Improved moisture properties, improved texture of fillings
